Oooh, that peach mozz basil one sounds great for this summer heat! I am a salad girl all the way... and not just lettuce and dressing salads. I like fancy salads with tons of veggies, grilled chicken or salmon, maybe some rice or a bit of quinoa, and homemade salad dressing. Basically just to the farmer's market and grab any veggie that you like, toss it all on oil/vinegar/herbs, add some lettuce and pasta/rice/quinoa, and you have a delish salad!

One of my favorite salad recipes came courtesy Marian Morash on the Victory Garden years ago. It's basically brown rice, cooked and chilled, with lots of crunchy chopped radishes (great at the farmer's markets this time of year) and crumbled feta cheese, tossed with olive oil and cilantro. Yummy!
