A Search for Salads that Satisfy
I know I’m approaching the point of “annoyingly-alliterative” GAH! did it again.
If I had it my way, my main summer cuisine would consist of burgers, brats, fries, and beer.
I mean – I do love some good fresh fruits and vegetables. After all-I grew up where they eat ‘maters like apples…straight from the dirt. But here’s an unofficial yet certain truth… self-made healthy, untainted, green, cruciferous, or otherwise super-healthy dishes just don’t taste as good. There’s a huge difference in the taste of a salad made for me by…almost anyone… and one made by my own well-intentioned hands.
So in order to induce myself to eat more salads, I gotta get creative. One of my recent issues of Real Simple pointed out some great salad ideas. I prefer the ones with meat on them. But the light fruity ones sound perfect for a hot day. What are your favorite salads??

One of my favorite salad recipes came courtesy Marian Morash on the Victory Garden years ago. It’s basically brown rice, cooked and chilled, with lots of crunchy chopped radishes (great at the farmer’s markets this time of year) and crumbled feta cheese, tossed with olive oil and cilantro. Yummy!
My mouth is watering just thinking of that Mary beth. Totally know what’s going on my grocery list next.
Oooh, that peach mozz basil one sounds great for this summer heat! I am a salad girl all the way… and not just lettuce and dressing salads. I like fancy salads with tons of veggies, grilled chicken or salmon, maybe some rice or a bit of quinoa, and homemade salad dressing. Basically just to the farmer’s market and grab any veggie that you like, toss it all on oil/vinegar/herbs, add some lettuce and pasta/rice/quinoa, and you have a delish salad!
